Evergreen has never-ending vegan options it seems. They have tofu, mock duck, mock chicken, mock pork, and mock beef. Mock chicken is the best though. Everything on the menu is clearly marked as vegetarian or vegan. There are even symbols for if the dish can be altered to be veg, or if it can't be. YUM!
Love Chiptole! Any location will do, this is just the one I usually go to. I get the vegetarian burrito bowl with rice, fajita veggies, tomatoes, guac, lettuce, and I sneak in some vegan cheese to put on too.
